Clos Mirabel’s Nut Roast Recipe

All families have their own traditions at Christmas, and at Clos Mirabel we are no exception. This year Ann shares with you our family nut roast recipe which is a firm favourite with vegetarians and non-vegetarians alike. We wish you a Merry Christmas and a Happy New Year … Enjoy!

Ingredients
2 large onions
3 oz of butter of olive oil
4 oz of chopped chestnuts
4 oz of ground brazil nuts
4 oz of ground pecan nuts
4 oz of ground walnuts
4 oz of brown breadcrumbs
1 rounded tsp of chopped parsley
1 1/2 tsp of vegetable extract
1 large egg
Salt

Method
Finely chop onions and fry in oil or butter until pale brown.
Turn in to a large mixing bowl and add all the other ingredients.
Bind with beaten egg and bake in a 1 Ib loaf tin at 180° for 40 mins.
Let cool slightly and slice in to 1.5 cm portions

Delicious served with a cranberry sauce or coulis.
