Clos Mirabel shares Tarte aux figues recipe

Rachel, originally from Québec, and her French husband, Xavier, run Clos Mirabel Manor. Food is one of their passions and they have introduced organic produce and fine cuisine for guests staying in B&B or in Self Catering Accommodation.

This month we share with you Rachel’s Tarte aux figues recipe made with gluten free pastry which she has perfected. She uses this same pastry recipe with plums, apples and peaches from their own fruit trees. Whether for a summer picnic or dessert at home now is the perfect time to try out her recipe for yourself.

Clos Mirabel Gluten Free Tarte aux Figues

Ingredients:
For the pastry base:
100g of gluten free plain flour
100g of almond meal
100g of salted butter
2 pinches of salt
50 ml of water
1 egg

Topping:
Fruit of your choice – Figs in this example
Brown sugar or maple syrup

Method
Mix flour and all dried ingredients in a large bowl.
Make a well in the middle of the flour and add the butter cut into small cubes.
Mix together by hand until you get a sandy texture.
Add water and egg and mix together until it forms a ball.
Roll out the pastry dough to approx. 5mm thick.
Transfer to a tart mould, use a sharp knife to remove excess dough around the edges and a fork to prick some holes in the bottom.
Place in a warm oven at 180° with cooking beans on top of the pastry dough for 8 mins.
Remove the beans and place fruit of your choice sliced on top.
Sprinkle with brown sugar or maple syrup and cook for another 15 to 20 min until the fruit is cooked.

At Clos Mirabel we use our own figs and quarter them, for plums we halve them and cook open face up. Apples and pears are thinly sliced, peaches are quartered with open face up… Just use whatever is in season and it will be delicious.

The Tarte aux figues can be served with crème fraiche, whipped cream or vanilla ice cream and is perfectly accompanied by a Jurançon sec from Domaine de Souch, our local vineyard which is 15 minutes walk away and offers wine tasting to our guests.

We also supply organic produce (fruit and veg boxes) for self catering clients and have a good wine cellar available to guests.
